Moci


I made this yesterday, the original recipe is from here. I have made some adjustment to the recipe according to my taste, wow it is so easy to make , just used your microwave, yumm....


Ingredients:

1 cup glutinous rice flour

3 tsp sugar

1 tbsp cooking oil

100 ml coconut milk

60 ml water

1 tbsp banana essence


Coating:

2 tbs corn starch

1/2 cup of chopped toasted ground peanuts

1/4 cup of fine granulated sugar

1 tsp toasted sesame seed


Method:

Mix glutinous rice flour, sugar, coconut milk, oil,banana essence and water in a microwavable bowl and microwave on high for 1 minute.

Stir well and cook on high for another minute.

Stir well, it should be cooked but if you are having a lower wattage microwave you might have to cook another minute more.

Let the dough cool. using an oiled scissor, snip into smaller pieces and coat well with cornstarch , add peanuts, sesame seeds, sugar (if not serving the whole portion, remove a small piece enough to eat, and put into the coating, then snip from there. Remove the coated dough for serving and leave the coating for the rest of the dough).

You make it so easy and simple, just coating moci with chopped peanut instead filling it inside. Good idea!
