Bakwan Sayur



I forgot where I got this recipe, but it is a nice one.

Bahan

300 gr tepung terigu

100 gr udang beku (udang kecil yang segar lebih bagus)

150 gr wortel (rajang atau potong sesuai selera)

150 gr kol (rajang halus)

1 butir telur

400 ml air



Bumbu halus

5 siung bawang putih

1 st merica

1 sm ebi (yang sudah disangrai/ dihaluskan)

1 ½ st garam

1 st gula pasir



Cara Membuat

1. Masukkan potongan wortel dan kol pada sebuah mangkok
berukuran sedang/besar dan tambahkan bumbu halus, telur, sedikit air,
dan jangan lupa ebinya (penambahan ebi akan memberikan cita rasa
tersendiri dan merupakan bumbu penyedap alami pada masakan). Aduk rata
sambil sedikit diremes-remes.

Note:

Proses 'peremesan' menyebabkan keluarnya juice atau sari dari sayuran
(wortel dan kol)

Ini mengakibatkan bercampurnya kimia bahan (sayuran) dan bumbu halus.
Bercampurnya secara "mesra" antara bumbu dan bahan merupakan salah
satu faktor penyumbang sedapnya masakan yang dihasilkan.

2. Masukkan udang, aduk rata (jangan diremes, nanti udangnya hancur)

3. Masukkan tepung sedikit demi sedikit (bergantian dengan air), aduk rata

Note:

Bakwan yang enak dan renyah dihasilkan dari adonan dengan kekentalan
yang sesuai, perhatikan adonan jangan terlalu encer atau jangan
terlalu pekat. Terlalu encer suatu adonan akan menghasilkan bakwan
yang terlalu lembek (dan akan menyerap banyak minyak), ini karena
rongga antar molekulnya di isi oleh minyak pada saat kita menggoreng,
Sedangkan bakwan yang berasal dari adonan terlalu pekat, akan
menyebabkan bakwan memiliki cita rasa seperti kurang matang saat
digoreng.

4. Ambil adonan dengan menggunakan centong sayur kecil dan
goreng dalam minyak dengan pemanasan yang sedang, hingga berwarna
kekuningan, angkat dan tiriskan.

Note:

Pemanasan merupakan faktor utama lainnya yang mempengaruhi cita rasa
masakan. Adonan yang digoreng dalam minyak terlalu panas, akan
menghasilkan bakwan dengan gosong atau matang diluar dan mentah di
dalam, sebaliknya pemanasan yang terlalu rendah akan menghasilkan
bakwan yang lembek (masuk minyak) dan tidak renyah. Jadi gunakan api
dengan pemanasan sedang.

5. Hidangkan bakwan selagi panas-panas, dengan cocolan sambal
Lampung (Indfood) bagi yang menyukai rasa pedas atau sweet and sour
sauce (saus Thailand).

Okonomiyaki

I did some adjustment to the recipe, because I used whole wheat flour, I added more eggs, it seems 1 egg didn't hold the okonomiyaki.

Ingredients:
1 cup flour (I used whole wheat flour)
3/4 cup dashi (or water)
1 egg
1/4 of a cabbage, about 2-3 cups packed (shredded)
1 carrot, about 1/2 cup (grated)
1 small zucchini, about 1 cup (grated)
1 green onion (chopped)
3 slices bacon
okonomiyaki sauce (or Worcestershire sauce)
mayonnaise
green onion (chopped)

Directions:
1. Mix the flour, dashi, egg, cabbage, carrot, zucchini and green onion in a large bowl.
2. Heat some oil in pan.
3. Pour in mixture and top with the bacon slices.
4. Cook on medium heat until golden brown on both sides, about 5-15 minutes per side.
5. Top with okonomiyaki sauce, mayonnaise and green onion and slice.

Pico de gallo




I have made this last month , found the recipe from this site.

(makes 2 appetizer sized servings)

Ingredients:
2 cups tomatoes (seeded and chopped)
1/4 cup onion (chopped)
1 jalapenos (seeded and chopped)
1 clove garlic (chopped)
1 lime (juice)
1 handful cilantro (chopped)
salt and pepper to taste

Directions:
1. Mix everything.

Low fat Zucchini lasagna


Still trying diet recipe, this lasagna really good, even I didn't used pasta on it.
Instead of pasta, I use Zucchini ( slice Zucchini length wise, rub with salt, set aside for a while, rinse it with water, the zucchini become the pasta for the lasagna)

Ingeredients:

chopped frozen spinach
1 can of pinto beans
1 can of tomato paste /spagheti sauce
cottage cheese
mozarella ( just small portion)
basil leaf
oregano
a pinch of chillies flakes
egg creation ( white egg)

Cassava leaves/Kale


No Cassava leaves don't be panic, just used Kale leaves for your dishes, taste the same. I tried this recipe, yumm. I added Pete and trasi ( shrimp paste).

Egg plant Ricotta bake


Try this recipe today, yumm, the recipe is from Martha Stewart but I change the cheese with low fat cottage cheese.

ingredients

2 large eggplanats (1 to 1 ¼ pounds each), sliced lengthwise ¾ inch thick
3 tablespoons olive oil, plus more for baking dish
Coarse salt and freshly ground pepper
1 container (15 ounces) part-skim ricotta cheese (1 2/3 cups)
3 large eggs
1 cup grated Parmesan cheese
2 tablespoons chopped fresh oregano (or 2 teaspoons dried)
1 jar (16 ounces) store-bought marinara sauce (2 cups)


Preheat oven to 450°. Arrange eggplant slices in a single layer on two rimmed baking sheets. Brush lightly on both sides with oil; season with salt and pepper. Roast until eggplant is tender and golden, turning halfway through, 25 to 30 minutes.
Meanwhile, in a medium bowl, whisk together ricotta, eggs, ½ cup Parmesan, oregano, 1 ½ teaspoons salt, and ¼ teaspoons pepper. Brush an 8-inch square baking dish with oil.
Lay a fourth of eggplant slices in bottom of prepared dish; spread with half of marinara sauce. Top with another fourth of eggplant; spread with half of ricotta mixture. Repeat layers, ending with ricotta; sprinkle with remaining ½ cup Parmesan. Bake until bubbling and golden, 20 to 25 minutes. Cool 10 minutes before serving.

Broccoli cheese sauce on the cup

I made this yesterday, I don't really like broccoli, but I have to to eat some veggies, after searching for a nice recipe I found one from Selera magazine, taste so good.

Ingredients:

300 gr Broccoli,boiled

50gr grated cheddar cheese


Cheese sauce:

2 tbs butter

50 gr flour

100 ml milk

100 gr grated cheese

pepper


Method:


- heat butter,add flour, cook untill done, add milk

-add cheese cooked again till blended

-add 2 brocolli into the paper cup,add 1 tbs cheese sauce and grated cheese on the top

-baked for 10 minutes at 160 C

Artichoke potato pie


Someone gave me a can of artichoke, I made this potato pie with artichoke inside, well taste very nice, you can add a can of artichoke, drain it from the water, add cheese on the top of the arthichoke, you can used Swiss cheese, or cheddar cheese,it will be nice if you wrap the artichoke with roast beef cold cut,or turkey cold cut, or ham( unfortunately I don't have in my fridge). I used mashed potato from box, because I am to lazy to cook today , hi,hi :P, season the mashed potato with nutmeg, pepper,salt, sugar. Add yellow egg with brush on the top of the mashed potato, bake 180C until done.

Huzarensla


Huzarensla is indonesian salad influence by Dutch cooking. The way to make the sauce or dressing is so different from the usual salad.


Ingredient:

3 tbs olive oil

4 tbs flour

200 cc milk

2 tbs mustard

1 tbs honey

5 boiled egg

2 lime juice

3 tbs vinegar

1 tsp pepper

1 tsp salt


Method:


-heat the olive oil, add flour, mix it until done , slowly add milk, until thicken, take out from the heat

-mashed the boiled egg ( the yolk) add to the milk mixture,add all the ingredients, dice the white part of the egg finely add to the mixture.


Other ingredient:


Potato, beet root, a can of dice pineapple, green peas, corn, boiled carrot and sweet onion.

Baked, steam Tofu and Mushroom


I went to Isha blog , I have some Tofu and mushroom in the Fridge, and I have no idea what I am going to make with it, thanks to Isha , I am inspired by her steam Tofu, so I make one
today, I steamed and baked the mix tofu and mushroom, thanks again Isha. I made some adjustment according what I have in my pantry.


Ingredient:

1 Tofu

1 box fresh mushroom

1 egg

1 lemongrass

2 salam leaves

4 green chillies

5 bird eyes chillies

4 candle nuts

5 shallots

3 garlic, 3 green onions

1 tbs salt

1tsp turmeric powder

1 tsp sugar


Method:

Mashed the tofu,mix it with egg, grind shallots, garlic, candle nuts until smooth, mix it with the mashed tofu, slice mushroom, slice the green chillies , mix it with others, add turmeric powder,slice green onions.salt,sugar.salam leaves, lemongrass crush .Wrap in banana leaf, steam for about 30 minutes, take it out from the steamer, grill with the the leaf still covered.

Eggplant Raita


It is really hot the weather this week, so I made cold dishes, egg plant raita , usually you have to fried the eggplant, because the weather is hot , I don't want to stay long at the kitchen, I just grill the eggplant and take out the skin. It is nice to eat this with roti paratha.




Ingredients:


6 eggplants grill and take out the skin


3 cup of plain yogurt


3 tbs Dahi bara chaat or chat masala


1 tbs garlic powder


chili powder for garnish


mint leaves for garnish




Directions:


-Grill the eggplant, take out the skin, leave it cool


-add yogurt, dahi bara chaat/chat masala, garlic powder to grill eggplant that already cool,mix it


-garnish with chili powder and fresh mint


-put in the refrigerator until cool.

Gado-gado Cemara


I am craving for Gado-gado Cemara, Indonesian salad. I found this recipes from here , it is nice to eat this in the summer time.

Ingredients:

Cabbage ( boiled it for 3 minutes and drain)

String beans (boiled it for 3 minutes and drain)

Beans sprout (boiled for 1 minutes and drain)

Fried tofu, 3 boiled egg

3 boiled potato


Ingredients for sauce:
300 gr peanut butter
5 or more red chillies (crush it using blender)
2 lime leaves , 1 lemongrass
2 cm kencur ( gellingale powder) optional
4 table spoon tomato ketchup
2 table spoon kecap manis (sweet soy sauce)
6 shallots
4 garlic
1 tea spoon salt
1 can coconut milk
1/2 cup of water, 1/2 of Maggi block or any other brand for bouillon
oil, lime juice 3 tbsp


Method:

stir onion and garlic with oil in medium heat until fragrance, add all the ingredients for sauce, cook until done.

serve it with boiled vegetable.
