Moist Chocolate Cake ( steam ) by Zubaidah Bt Chepa

This cake is really moist, but I made some mistake I didn't cover the pan when I put in the steamer, next time I have to cover the pan with foil and tied it with a thread, so wont wet at the bottom, but any way the cake still taste nice , even a bit wet at the bottom.

This recipe , I found it by googling the net, the recipes by  Zubaidah Bt Chepa, a malaysian Chef..


[A]
100g cocoa powder
200g sugar (reduced from 250g)
1 tin evaporated milk (I uses carnation brand)
200g oil
250g condensed milk

[B]
4 eggs (lightly beaten)
150g flour
1 tsp baking powder
1 tsp baking soda

Method
Combine [A] in saucepan and heat until smooth
Remove [A] from heat, stir in eggs
Fold in [B] and whisk lightly until combined (DO NOT OVER MIXED)
Steam at high heat for 50 min

Mint green tea chocolate steam cake


Well, steam cake again :) , the recipe I found from here, I change the flavor with green tea and mint flavor, and chocolate. Instead using butter like the recipe said I used canola oil.

Green tea steam cake


I want my steam cake taste like suji leaves, because I couldn't find it here, I used green tea powder mixed it with pandan essence, well it is taste the same. Next time I will add white chocolate instead of coconut milk in this cake, the recipe for this cake the same as the steam chocolate brownies, I change the chocolate with coconut milk and green tea,but I think it is way better using white chocolate than coconut milk.
Ingredients:
6 eggs
sugar 225 gram
Vanila 1tsp
salt 1/2 tsp
Flour 125 gram, sieve
vegetable oil 175 ml ,white Cooking Cokelat 100 gram (melted)
sweet condensed milk 75 ml
green tea powder/ essence 1 tsp

Directions:

Beat egg with sugar until fluffy, add flour , stir with spatula. add oil and white cooking chocolate and green tea essence.steam for 1o minutes. add 1/3 of the ingredients with 75 ml condensed milk and steam again for 10 minutes, add the rest of the ingredients and steam again for 25 minutes.

Steam dark chocolate Brownies


I am so depressed this day because the weather is making you miserable, snow everywhere so messy and also cold. I made this to cheer me up and other at home, well it is working :)

This recipe is so good, yumm, I don't have dark cooking chocolate ,I only have chocolate milk, and not for baking, what to do, don't be panic, used it and add 1 tsp coffee powder, amazingly taste the same. Look at the picture , there is some surprise in the middle of the layer cake, the sweet condensed milk that mix with the batter ,make this cake so rich. The recipe is from here. I will translate the recipe tomorrow.
Ingredients:
Telur 6 butir
Gula 225 gram
Vanili secukupnya
Garam secukupnya
Emulsifier 1/2 sdt teh
Terigu 125 gram, ayak,
aduk rata dg coklat bubuk,Coklat bubuk 50 gram, ayak,
aduk rata dg terigu Minyak 175 ml ,Dark Cooking Cokelat 100 gram, lelehkan, campur
dg minyak Susu Kental Manis (SKM) 75 ml
Directions:
Kocok telur dan gula hingga mengembang, masukkan campuran tepung terigu dan cokelat bubuk. Aduk perlahan hingga rata. Masukkan campuran minyak dan DCC, aduk hingga rata. Sisihkan sepertiga bagian adonan, beri SKM, aduk rata. Bagi 2 adonan tanpa SKM, bagian I kukus selama 10 menit, tambahkan adonan dg SKM selama 10 menit, terakhir masukkan adonan sisa tanpa SKM, lanjutkan mengukus selama kurleb 20 menit. Angkat.

Steam cake chocolate cheese




I made this today, I don't have emulsifier, I used 1 tsp baking powder, found the recipe from Rumah Ningnong, yumm so soft and sponge like cake.


Ingredients:

4 eggs

160 gram sugar

1 tsp emulsifier

170 gram cake flour

100 ml milk

100 ml cooking oil

1/2 tsp vanilla

dark cooking chocolate , or rice chocolate

butter cream

grated cheddar cheese


Directions:

Heat the steamer. Beat the eggs,sugar and emulsifier till pale. Add flour alternately with milk and cooking oil, blend it with spatula. Grease the cake mold with cooking oil, at the bottom put parchment paper. add the ingredient steam for 10 minutes , add chocolate grated on the top, and add the rest of ingredient steam for another 20 minutes till done. When it is cool add the butter cream and cheese on the top and side.

Sweet and Sour layer Cake


Only one word to described this cake yumm. I used Haw candies for this cake. The recipe is from here.


Ingredients:

330g cream crackers

350g butter/margarine

400g condensed milk

10 large eggs, separated

100g fine granulated sugar

120-180g large Haw Flakes ( Weight of Haw Flakes depends on size of Haw Flakes used and how close they are placed in the cake.)



Method:

Prepare a 8-inch cake tin. Lightly grease with butter/margarine.Crush cream crackers until they resemble breadcrumbs.

in the food processor or alternatively, use a large Ziploc bag, close and crush with rolling pin.Beat butter and condensed milk until creamy.

Add egg yolks one at a time and beat until well incorporated.

Beat egg whites and sugar until fluffy ( Egg whites need not be beaten till stiff peaks form.)Add crushed crackers into mixture of Step 3. Mix well.

Fold egg whites into batter.Bring water in a steamer to boil.

Place prepared cake tin into steamer and using a 4 oz ladle, scope batter into tin.

Level batter with a small offset spatula. Top batter with Haw Flakes and steam for 5minutes.Repeat layering of batter and haw flakes, and steaming until all batter is used up. Increase steaming time as the cake becomes thicker.When all batter is finished, steam cake for further 30 minutes.Let cake cool completely before turning it out from the cake tin.


Note:If you are using normal plain crackers (not cream crackers), weight of butter/margarine can be brought up to 400g.

Steam moist chocolate cake



For Chocoholic addict, this cake so moist and mmm, mmm , good. This recipe , I found it from here.


Ingredients:

1/2 can of Full Cream Evaporated Milk (about 200g)

250 g butter

2 Eggs,lightly beaten with a fork
1 cup of Plain flour

1/2 cup of Cocoa powder

1/2 tsp Baking powder

1/2 tsp Baking soda

1/2 tsp Vanilla Extract or 1 tsp Vanilla essence,

1 cup sugar


Method:

1. Combine Castor sugar,evaporated milk,vanilla extract or essence and butter in a saucepan.

2. Stir over low heat until sugar is dissolved and butter is melted,off fire and keep warm.

3. Add the beaten eggs into the slightly cold Evaporated milk mixture and stir till well mix.

4. Sift the flour,cocoa powder,baking powder and baking soda into a large mixing bowl then pour the eggs mixture over the flour and stir till well mix (cake batter should be runny).

5. Heat up the steamer.

6. Lined and greased a 8 or 9 inch baking pan.

7. Pour the batter into prepared pan and place the pans into the steamer and cover the top of the pan loosely with a piece of aluminium foil.

8. Steam over medium heat for 45 mins.

9. Cool the cake in pan before turning out for further decoration.


Chocolate fudge Topping:

1/2 can of Condense milk

1/2 tsp of Vanilla extract or 1 tsp Vanilla essence

1/4 cup Corn oil1/6 cup Cocoa powder,sifted1/16 tsp Salt (Okay, this is just a small pinch of salt)


1. Combine the sifted cocoa powder,condense milk and oil.

2. Stir over low heat till thicken (stirring all the time).

3. Add in salt and vanilla extract or essence.

4. Cool the chocolate topping a little before spreading on the cake.


Notes(by me!):

1. I did not line the cake pan, but i greased the pan generously.

2. Boil a kettle of water and keep it as stand-by while steaming the cake. This is to top up the water in the steamer if it dries up¦(This is optional, but i find it useful)

3. You can substitute the butter in the cake with corn oil. The cake would turn out more moist but with butter, the cake would be more fragrant.

4. With a metal spoon fluff up the flour in the bag,and lightly spoon it into the measuring cup while held over a sheet of waxed paper or the flour canister. Let the flour heap up and overflow. Do not tap or shake the cup to level it. When the flour is over the top,use the flat side of a knife or spatula to sweep off the excess flour so it is level with the top of the cup.
