Martabak/ Meat Pancake

Pancake Ingedients:

250 gr high gluten flour ( Bread flour)

135 ml water, 50 ml vegetable oil

1 tsp salt


Pancake Methods:

Mix flour with water and oil together untill you can form a big ball, divide the ball to 5 small ball, soaked all the ball covered in oil for 30 minutes or 1 hour. Press the small ball till become very thin like paper ( transparent).


Filling ingredients:

500 gr ground beef

1 onion slice thinly

4 cloves of garlic slice thinly

3 tbs ghee

2 tbs Garam masala /" Gule " ( indonesian paste) paste

5 or 6 large eggs

20 chop spring onions/green onion

1 tsp salt

Beat the egg with fork put the chop spring onions into it and a little bit of salt, put beaten egg a side. Fry the onion and garlic with ghee till fragrant, put the ground beef and garam masala or Gule paste, cook it untill done, leave it to cool. When it cool mix it with egg and chop spring onions. This is the filling ingredients for the Martabak.


How to assemble the martabak:

After you made the thinly pancake, put the transparent pancake on the medium heat oil ( about 20 tbs oil) ,then put filling close the pancake like enveloped, fried it untill yellow ,done.

You can eat it with Acar ( pickle)


How to make Acar/ pickle:

1 cucumber dice (1 cm x 1 cm)

2 carrot dice (1/2 cm x 1/2 cm)

4 small red onion dice

4 whole bird eyed chillies

Soaked all the ingredients marinated in vinegar, granulated sugar,and water for 1/ 2 days untill ready to use.

Hello! Your recipe for the murtabak dough is slightly different to the one I used for roti canai. I might try adding more oil to mine, and soaking the balls in oil, maybe that will make it oilier!

Hi,workandspoon that is good ideas maybe you can put a little bit of oil in the dough and soak it in the oil, don't be to long only 30 minutes or 1 hour, because the canai will turn to thin and skin break easily. Good luck in trying :)
