Easy birthday cup cake


I found this recipe, I forgot from where the source is, but she mention on her blog from cook's country magazine. It is easy to make and delicious,


Ingredients:

3 C. cake flour

1 t. baking powder

1/2 t. baking soda

1 t. salt
4 eggs (large) at room temperature

2 t. vanilla extract

1 1/3 C. sugar

12 T. butter, melted and cooled slightly

1 1/4 c. buttermilk


Preheat oven to 325. Line 2 standard muffin tins with liners.
Whisk first four ingredients in medium bowl.
Whisk eggs & vanilla in large bowl until well mixed.

Add sugar in a steady stream, whisking constantly.Whisk melted butter in gradually. Next add buttermilk.
Add dry ingredients, 1/3 at a time, whisking in between additions until few streaks of flour remain. Stir batter until most lumps are gone, taking care not to over mix.
Fill cupcake liners 2/3 full. Bake with pans side-by-side (middle position of oven) until cupcakes just begin to color and toothpick comes out clean, 18-22 minutes. Cool in pan for 4 minutes. Remove from pan and cool on wire rack for 1 hour.


The original recipe using this frosting but I made it with key lime butter cream this time.


Quick Chocolate Frosting
1 C. Semisweet chocolate chips, melted and cooled slightly

2 1/2 sticks of butter at room temperature

2 3/4 C. confectioners sugar

1/4. C. unsweetened cocoa

2 T. milk

2 t. vanilla

1/8 t. salt
In electric mixer, beat butter until fluffy (about 30 seconds). sugar 1 cup at a time, mix to combine. Add cocoa, raise speed to high and mix for 1 minute. Add melted chocolate, mix to combine. Reduce speed to medium low, add in milk, vanilla, and salt. Increase speed to high and beat until fluffy (about 30 additional seconds).



Key Lime Butter cream:

1 cup unsalted butter

1 cup Crisco

2 teaspoons real vanilla

1/4 teaspoon salt

8 cups powdered sugar

6 tablespoons key lime juice (more if desired for consistency and flavor)


Directions for Key Lime Butter cream:Beat butter and shortening together for about 5 minutes. Beat in vanilla and salt. Add powdered sugar 1 cup at a time alternating with the key lime juice.

Almond Peach Yogurt Cake


I have to much of fresh peaches, found a good recipe in here, the cake really moist , I made some adjustment because I am trying to cut down on sugar, so I used brown sugar and a little bit of corn syrup instead, added 1/2 tsp baking soda, amazingly the cake still moist even less in sugar, I used orange juice instead of milk . one more thing I don't used mixer when I made this.
Ingredients:
310 gm of plain four
1.5 tsp baking powder
150 gm of Castor sugar
80 gm of brown sugar
100 gm of almond ground
150 gm butter
100 gm plain yogurt
2 tsp vanilla essence
1 lemon zest
5 eggs
3 tbsp of milk
1 canned of peach in syrup, drained and cubed
Some almond slices or almond nibbed
2 tbsp of Limoncino (optional)


Methods:

1. Beat butter and both sugars until creamy. Add in yogurt and vanilla essence and mix well.

2. Add in eggs one at a time and beat well.

3. Add in sifted flour and baking powder. Add in also the ground almond. Mix it thoroughly. Add the limonciono and milk and stir well.

4. Pour half of the mixture into a lined baking tin. Top it with the cubed peaches. Pour the remaining mixture over the peaches to cover it. Smoothed the top and sprinkle with almond nibs or sliver or slices generously.

5. Bake in a preheated oven at 180C for 40-50 minutes.

6. Test with a cake tester and when it comes out clean cake is cooked.
Unmould cake and leave it to cool with the side with almonds on top.

Orange cake ( no mixer )




Well, I found this recipes for cake without mixer by Ita kustina, I gave it a try, refreshing with orange, almond in it, next time I have to add more maizena / corn starch instead of 30 gr, I have to added 50 gr, because if not , it will be to runny the filling. I added a little milk to the filling, maybe next time I will do it without the milk, only orange juice.

This cake is so easy to make , you don't have to use a mixer. I only made 1/2 of the recipes.


Ingredients I :


1 cup ground almond

2 cup all purpose flour

1 tea spoon double acting baking powder


Method :

put all ingredients I in the bowl.


Ingredients II :


2 cup of sugar

375 gr butter or margarine

1 cup orange juice


Method:

Cook all the ingredients II with low heat until the butter and sugar melt. Careful don't burn it. Leave it to cool.


Ingredients III:

12 egg yolks

3 eggs white


Method:

Mix the egg with fork just until mix, leave it a side.


Method for all:

1. put all ingredients II into ingredients I, slowly , until mix

2.put the egg that all ready mix with fork into step no 1 (above)

3.Divided into 3 cake mold ( round 24 cm)

4.baked 180 C for around 30 minutes.


Orange filling:

300 cc orange juice

50 gr maizena

50 gr sugar

1 tablespoon butter


Method:

Cook all in the low heat until thick.

put the sauce in between the cake .

*I added 1 cup orange juice with rum essence , in the cake so every layer of the cakes is moist and you can taste the oranges flavor.
