Well the original title of the recipe is Yummy in the tummy Banana muffins, the predict , yup is really yumm , I got the source of the recipe from the basic shelf cookbook, city of york health unit, 1995. If you don't have whole wheat flour , you can used all purpose flour.
1/2 cup all purpose flour
1/2 cup whole wheat flour
2 1/2 tsp baking powder
1/4 tsp baking soda
3/4 cup rooled oats
1/4 cup lightly packed brown sugar
1/2 cup white sugar
2/3 medium ripe bananas, 1/2 cup raisins
1/2 cup milk
3 tbsp margarine/butter melted
1 tbs banana essence
1.Preheat oven to 180 C
2.Put all purpose flour , whole wheat flour, baking powder and baking soda in a large bowl. Stir in oats,sugar and brown sugar. set aside.
3.Mash bananas in a medium bowl. add egg,milk and melted margarine, mix well.
4.stir bananas nixture into the dry ingredients. Stir just untill blended.Do not over mix.
5.Lightly grease 12 large muffin cups.Put the muffin batter into the muffin cups.
6.Bake in oven untill tops are firm when lightly touched with your finger about 20-25 minutes
7.Remove muffin from tin and cool.
